Some client-side mods can show Villager career (brown robed villager careers: Fisherman, Farmer, Shepherd, etc).
Because TradeCraft assigns professions based on editable config, the entity NBT’s Career doesn’t influence what is shown in the trade GUI, which is good.
I propose editing entity’s Career tag if config-defined careers (sub nodes of Professions) match vanilla ones. For the record, those are vanilla:
