Pointing to an EpiDoc version rather than to the latest

According to EDAG's March 2024, should we specify a particular version of EpiDoc in each of EFES's releases rather than referring to the "latest" version?

Addendum from January 2024: it involves primarily creating a branch of a tagged version linked to an EpiDoc release, to be distributed as a version for teaching and dissemination purposes, ensuring that nothing gets accidentally broken.
