Write more ADRs

We made a good start on ADRs but we're missing them for later work.

Add more describing:

• Ceph object store
• choice of Iceberg catalog (REST, Nessie vs Lakekeeper)
• choice of Superset over Metabase
• dlt
• dbt
• Keycloak
