Is using the Nightly Docker tag the best practice for installation?

I've noticed that all the docker-compose examples for Invoiceshelf use the nightly Docker tag and new users are referred to these examples so most users will be running the nightly version.

Wouldn't it be a better idea for the majority of users to use the latest tag? I see the documentation says that nightly is supposed to be stable, but wanted to double check, since I'm running over 100 services and this is the only one that recommends nightly as a default.

You are right. I'll update the compose files to ensure they use the latest tag instead, but the user can switch to nightly later.

In future we will use :latest tag, just not the time yet.
