Can there be a way to override the current vanilla tweaks resource pack instead of creating a new one? and could there be a way to read the full description of a pack instead of only part of it, maybe even have icons used in the vanilla tweaks page for a basic visual description?

I think the first thing could be possible, and if so, I'll try to implement it as an option. I have plans to change the screen for the next release. Icons and larger descriptions for the packs are planned for that release as well.
Sorry for the delay of my response, I have been busy with other projects and, starting from next week, I won't have as much time as before, so the development of the new release will be slower (I have already started with it).

As of 2.0.0 you can edit existing files in-game (by clicking on the pencil on the bottom-left corner of the pack entry, in the list), though I'm not sure if that's exactly what you want
