Create colour dictionary for categories #112
Description
Create a dictionary containing all categories used for the plots, and give unique colours to each one. This will ensure for example, that a categories found in the map will have the same colour as the same categories in the water delivered plot.
For this the property of discrete_color_map of Plotly Express can be used.
