Docker image isn't available for arm64 platform

This PR made some changes to the image build but ended up removing the platforms: linux/amd64,linux/arm64 line that built the image for raspberry pis.

@allen-archer introduced this changes. In first sight, I cannot find any easy solution to create multi-arch build with jib-maven-plugin. I'll do some research, if I can parametrize this somehow.

Hey @nyancattie , I tried now to fix this. Happy if you can check out if the images are now working on arm64 with v0.125.1.
