Upgrade Nextcloud, notify-push and Redis Docker Images

Feature request

Please upgrade both the Nextcloud and Redis Docker images as proposed in the following pull requests:

• Update Nextcloud to v31.0.7 (#152)
• Update Redis to v7.4.5 (#151)
• [Notify-push] chore(deps): update dependency nextcloud/notify_push to v1.1.1 ns8-nextcloud#153
  Why
• Keeping these images updated delivers the latest security patches, bug fixes, and improvements provided by their respective upstream projects.
• Ensures platform reliability and security for all users.

Proposed solution

• Merge PRs #152 and #151 to update Nextcloud and Redis Docker images respectively.

Additional context

• Routine dependency updates are fundamental to best practices in containerized environments.
