Improve readability of template selection menu

Problem

When running sky create-vault and selecting a template, the template descriptions are very long and wrap across multiple lines, making the selection menu difficult to read.

Current Behavior

Template options display with full descriptions that can be hundreds of characters long:

❯ customer_identity - Customer Identity vault consists of Persons, Identifiers, Contacts and Organizations objects which provide the ability to store sensitive information about a person such as name, address, phone number, and American identity numbers such as Social Security Number and Drivers' Licence.
  payment - Payment vault consists of Consumers, Credit Scores, Cards, Transactions, Financial Service Providers and Merchants objects that provides the ability to store payment information about a consumer.

Solution

Truncate template descriptions to 100 characters with an ellipsis (...) to improve menu readability while still providing enough context to make an informed choice.

Expected Outcome

Template selection menu displays concise descriptions that fit comfortably on one line.
