Add unit tests for embedder.py

Unit tests should go under the tests/ folder.

The embedders under embedder.py rely on external API, which will have to be mocked in the unit tests.

I wrote the geminiEmbedder test class but it is using genai library, and every version of that requires openai==0.27.0 version, which is incompatible with rest of the projects libraries.Please look into it.
