Better Documentation for Wiring

I think it would be really ideal if, in the documentation, there was much clearer explanation of the wiring for the connectors. In particular, if you are not using eduMIP, it is not at all clear what the wiring for the encoder JST connectors is without going into the schematic, and still a little hard to tell which connector is which.

If I have this table correct, I'd be happy to put together a little PDF document for at least the encoders and submit a pull request.

I think, for people that don't have EAGLE, it might also be really helpful to have a large image or PDF of the board, so lines can be followed to see what they are.

I'm trying to be helpful. I know it's a headache mantaining open-source projects.
