This was pretty straightforward for me to get setup. However, when I run the script I get a PDF with no pages. The workbook I'm trying to get get as a couple views. Is there a variable for that?

Same problem here. There is a defect in the template code. The problem is that the library doesn't enumerate all views on a server with more than a couple hundred views. It's paginated and truncated. So what's happening is that the PDF is scaffolded, but when the loop runs that looks for matching views it doesn't find any because it doesn't have the full list from the server. adding req_option_workbook in the second line below, where the views are enumerated will fix this, this causes the view list to be scoped to the target project only, and solved the issue for us.

I fixed that locally by adding the following:

from tableauserverclient import RequestOptions, Pager
...
req_options = RequestOptions(pagesize=1000)
for view in Pager(server.views, req_options):

That "for view..." line replaces the "for view in all_views:" line (line 136)
You can then remove this line (line 134):
all_views, _ = server.views.get() # Get all views
