Huawei 4G modems K5161H getting same IP - any suggestions?

I have three Huawei K5161H 4G USB dongles with SIM cards connected to my Raspberry Pi4B via the built-in USB ports.

They don't have any settings that allow turning off DHCP or allocating IPs. Therefore:

• If I try and configure with static IPs, they fail to connect (no IP defined, no gateway defined).
• If I try and configure with DHCP, they configure themselves with the same gateway IPs (and quite often the same IP) and then fail in whole variety of different ways (which I presume is expected as manual config needs different subnets)

Which I presume is why they're failing and the OMR fails to deliver any connectivity.

Can anyone suggest a workaround or, if necessary, suggest 4G USB dongles which can be set with a static?

You have a big time difference between server and router, set both to correct timezone.
What is the result via SSH of ip r, ip a and ip mptcp endpoint show ?

Time difference self-resolved when I turned it on this morning... then when I rebooted again - seems to have a persistent few seconds of difference, which won't self-resolve:
