Create a 5.5.0 Branch

Can we please create 5.5.0 Branch? I Forked ElasticSearch and ELK and have updated them to the latest CP, Consul, LS, ES, KB and would like to be able to iterate with others in the community before merging 5.5.0 to the master branch. There are still some Todos, etc.... but without having a branch to work out of I can put in PRs.

Some todos:

1. Create Dev vs Prod configurations specific to ES (Like we have in Consul with --bootstrap-expect)
2. Use Keys / Certificates instead of hardcoded UN and PW in X-Pack / ( Like we do in Prometheus
3. Configure Prometheus plugin to allow for scraping.
4. Add a Docker --log-driver test to the examples.
5. Determine if we should use consultemplates instead of sed. Some aspects of the ELK stack .yml's don't interpret ${HOSTNAME} /facepalm. (Kibana I believe)
6. Put all the lifecylce hooks into one manage.sh
7. Add Backup with Manta
8. Make X-Pack optional via EnvVar XPACK_ENABLE=1 or XPACK_ENABLE=0
9. Update the Documentation / ScreenShots
