Update Terraform configuration to use stable channel for opensearch and opensearch dashboard

Steps to reproduce

To unblock the CI regarding terraform validation, we have updated the channel of opensearch and opensearch dashboards to use 2/edge. This was because the base 22.04 for opensearch was causing an issue when spining up a machine on CI, and to use 24.04 we would need to change the channel since 2/stable at this moment don't support such base. After release we would need to update the channel.
