dbt 1.11 has been released, but we are still on version 1.9. There are some cool new features in 1.10 and 1.11 that I think we could use, including user-defined functions and standalone anchors. Let's take a minute to upgrade our dbt version so that we can start taking advantage of new features.
I suspect we may start seeing some deprecation warnings as part of this upgrade effort, so as part of the scope for this issue, I think we should either resolve these warnings if the resolution is simple, or open issues to resolve them if the resolution is complicated.
We should also upgrade the Athena adapter, which has had a few releases since our current version (1.8.4).
