[PBI] Add concrete versioning for service

Description

When the service registers with Chariott, a version needs to be provided. This should be consistent throughout the project and should be either auto managed or easy to bump.

Acceptance criteria

• Add version tag to project
• Version has a single source of truth
• Version is either easily updatable or even automatable - see other projects
