Migrate to Nuxt Image v2

Description

Nuxt Image v2 was released on Nov 5, 2025. We should migrate soon to stay aligned with Nuxt updates.

Mux is not part of the official Nuxt Image v2 providers, while Shopify is now officially supported.
We should re-evaluate our provider strategy and revisit PR #30

Checklist

• Upgrade to Nuxt Image v2
• Update nuxt.config image configuration
• Switch to official Shopify provider
• Re-evaluate / refactor Mux provider (PR Refactor Mux provider to use new operations generator #30)
• Verify image rendering and SSR build
