node-sass 5 causes builds to fail in node 16

Heya!

Thanks so much for this template! I've been learning a lot and appreciating it.

I noticed when building on Netlify with node 16 and on macOS locally with node 16, the node-gyp installation fails related to node-sass.

I tried updating my fork's version to node-sass 6 and that did the trick!

Shall I go ahead and add a PR for this here?

I had the same problem running on Node 17. As a solution I changed node-sass to use sass instead, as node-sass is deprecated.
