Load `openapi` dynamically

Currently we have 2 files hardcoded in the near intents docs with the openapi specification - one for 1Click API the other for the Explorer API, we need to check if we can load them directly from the API endpoint

pushed directly to main as there is nobody to review it, we now load the .yaml files directly from the REST API endpoints
