Custom ROI definition

I'd like to add a function to data_loader.py that can handle extracting time series from data using a custom mask (I'm imagining a 4-D nifti) to define a set of ROIs. Let me know what you think and if we can set this up together!

Hi @m-miedema , that'd be great! Currently the user is limited to only Shaefer atlas with different resolutions and it'd be nice to have the option to use a custom masker! If you have an idea how to implement that already, please go ahead and do so and let me know if you have any questions!
