[PROPOSAL] Unmaintained OpenSearch k8s operator repo

The k8s operator for OpenSearch repo is unmaintained, with many open issues, unmerged Pull Requests, and production issues with the released versions we see at our customers

We (Pulse and BigData Boutique team) - OpenSearch partners and developers - are happy to take responsibility, and given maintainer rights - merge PRs, manage issues, add content and guides, and promote usage.

I would love to see more maintainers for the OpenSearch operator project. Usually adding a maintainer goes through a nomination process https://github.com/opensearch-project/.github/blob/main/RESPONSIBILITIES.md#becoming-a-maintainer. Here is an example and it is same for all repos in the OpenSearch org:

• Add Atri Sharma as a maintainer OpenSearch#19221
• [GitHub Request] Add Atri Sharma as a co-maintainer to OpenSearch .github#380

We can work together on this and then go with the nomination process.

Is this still an issue? While having just TWO maintainers isn't great, it's better than 10 non active maintainers.

I see a lot of progress just in the last month:
