Proxy tool - traffic capture

A nice tool to develop or adapt would be a proxy between 2 systems that:

• generates metrics
• register traffic

Nginx is already capable of open telemetry metrics generation, may be it can be configured to capture traffic to generate mock descriptions (capturing request + matching response)
