Further updates to the guide for the beta version

Requires a handful of subtle changes we made to both the api and gui to be reflected in this guide e.g., TimingWindows are now optional for Observations.

Additionally, we need a sections on Investigators and SupportingDocuments.

There may be more stuff I have overlooked.
