Add support for custom Northstar versions

First of all: Thanks for the docker container!
My issue is the following: I'd love to use Northstar-dedicated for frontier defense and found a supposedly working mod at here buuut since it replaces the Northstar mod it loads all scripts again, which obviously causes a crash... It would be great if there was an option to override the Northstar source...

I'm sorry if this issue is caused by a lack of understanding for docker or if I missed something obvious.

On third thought: since there has been a lot of work put into reducing the footprint of the server it's probably a really bad idea changing anything in the main Northstar mod...

Hi, I have a fork which does exactly what you're looking for.
Simply replace the image name in your compose.yml to ghcr.io/bobbyperson/northstar-dedicated:1-tf2.0.11.0
