It seems that maze does not generate in custom dimensions. Is it intended or configurable?

Yes, currently the maze generator is only applied to the three standard dimensions. If the custom dimension uses the normal noise chunk generator, it should be possible swap it out in the datapack for the maze generator, preserving the noise settings.
The chunk generator needs to be replaced with mazeworld:maze_world. Then a maze_settings field can be added in the same object that also contains the noise settings. In maze_settings, the mazeworld settings can be configured. I haven't tried this yet, but as far as i know this should work.
