Make eslint config stricter, sort imports and object keys

note: we might want to use this to automate this https://eslint.org/docs/latest/rules/sort-imports (edit: after looking at this, it seems that this is not a fixable eslint rule.

I have a working example of a great and strict eslint setup in wallet-ui/wallet-ui, stolen borrowed from anza-xyz/kit but it's relatively complex and hidden in packages. That said, I would be happy to adhere to that style.

The important thing is that it's strict and automatically enforced.
