Update labels for languages and scripts

We want these to follow the values in https://bl.syriac.uk/documentation/guidelines#textlanguage (for languages) and https://bl.syriac.uk/documentation/guidelines#handdesc (for scripts).

Discuss if it would be easiest to have these in a singular place (i.e., as XML) in our documentation that the XSLT can pull from?
