Would it be possible to setup Bluetooth so that requires passcode or pin number to sync?

Doubtful,
Setting up passcodes / pin would be part of the BT functionality provided by Expressif, not directly by this library. And AFIK Expressif only support using a PIN for BT serial connections, all other connections use a PIN-less setup.
