Monitoring Documentation

We added monitoring in this commit: trufnetwork/kwil-db@162cabe

We should add documentation for this. This is not a release blocker, since this was snuck in last-minute for usage by the Truflation team, and they are already capable of using it. We just need to make sure we document it for v0.10

Will do this after tagging release today. Now it's in the context of our own OTEL metrics.
