CCExtractor appliance emits atoms longer than 1 character

## Bug

This is a little silly -- we should be able to rely on an 'ATOM' being a character / emoji / whatever the smallest possible meaningful unit is based on the content (we don't call it a character because I just imagine there will be a circumstance where you might need more than one character -- e.g. emoji + skin tones)
