Technical logs disclose holder information

Describe the bug
In issuer logs, personal information is disclosed. To keep holder privacy, we should hide private content from the logs.

To Reproduce
Issue a credential and inspect the logged information.

Expected behavior
No private information should remain in the logs.

Note that upgrading @sd-jwt/core to the latest version is required.
