docs(xcp-ng): move xcp-ng ecosystem page to vates vms doc

Following Marcpezin's request to move the XCP-ng ecosystem page over to the Vates VMS documentation, this commit removes that page from the XCP-ng documentation, and updates links and references accordingly.
