Add Contributor Activity GraphQL Service

This PR adds a new service file to fetch contributor activity across the organization using GitHub GraphQL API.

Changes:

• Added fetchOrgActivity service under src/services
• Supports fetching merged PR data across repositories
• Prepared groundwork for Contributor Activity Matrix feature

This contribution is part of my preparation for GSoC 2026 and addresses the feature request in issue #30.
