docs: add lab8 submission

Goal

Complete Lab 8 on Site Reliability Engineering (SRE) - monitoring system resources and configuring website monitoring using Checkly.

Changes

• Monitoring of system resources (CPU, memory, I/O) and disk space management is performed
• Website monitoring has been configured BBC.com using Checkly
• API Check and Browser Check are configured to check the availability and functionality of the site.
• Email alerts are configured for problem notifications
• Screenshots of the configuration and test results are provided

Testing

• Clone the repository and checkout the feature/lab8 branch
• Navigate to labs/submission8.md

Checklist:

• Clear title and description
• Documentation/README updated if needed
• No secrets or large temporary files
