Modify example gain function names to prevent compilation errors when adding regular gain module in the future. Modify KConfig so that example modules are not built by default. Signed-off-by: Annemarie Porter <quic_annemari@quicinc.com>

Change function names for example_gain module, and add soft_vol and gain modules.
