feat: add SNT token to Linea mainnet and sepolia lists

Context / Rationale:
Adding SNT token to the list, as Status Wallet is currently working on adding support for Linea networks (Mainnet, Sepolia)

Add tokens

• Add Status on Linea mainnet as SNT (canonical-bridge), with Ethereum root mapping
• Add Status on Linea Sepolia as STT (canonical-bridge), with Sepolia root mapping

• Update updatedAt to 2025-12-22 in linea-mainnet-token-shortlist.json and linea-sepolia-token-shortlist.json
• Bump versions: mainnet 1.68.1, sepolia 1.4.0
