Mushroom soup is very easy. Mushrooms propagate naturally in caves, do not rot, and the soup can be crafted in your 2x2 grid.

What are some building materials that aren't affected by gravity

Glowstone, End stone, many lights, and all blocks in the Catwalks mod (support columns, catwalks, etc). Will float and hold up anything above them in a 2 block radius. The support columns from catwalks are particularly cheap. Many blocks (such as planks and stone) will fall if placed in a line, but will hold each other up if built on a diagonal (e.g., at least two neighbor blocks of the same material)
