This removes the need to set a Privy key in the .env file wile keeping the exact same current behavior if the key is set.

This makes the experience of contributing to this repo easier since any dev can run the project just by running

npm install
npm run dev

with no extra steps like creating an account in Privy and generating an API key. This keeping it open source friendly to external contributors.
