updates the release workflow to give you the option of releasing from main or mainnet-alpha-beta.
this will also give you the option of which tag you can use. main will result in a prerelease and v2.x.x-beta version. mainnet-alpha-beta will continue the v1.x.x versioning and show up as the latest release when going to the repo.
a new docker-retag workflow is also now available. this will allow you to tag stable, prerelease, and edge from an existing semver version.
