Small change, we should probably remove all references to organization
The ERD had fallen out of date over time. This commit introduces a slew of corrections so that the documentation actually reflects the entities in our system. It also comes with some added LLM instructions to increase the chances that our documentation will stay fresh going forward Issue #2174 Fix the ERD to refelct new entities for "external" field values
