Migrated the application's charting library from Echarts to shadcn charts (recharts).

  1. Installed recharts and lucide-react.
  2. Added src/components/ui/chart.tsx via shadcn CLI.
  3. Created src/components/charts/ShadcnCharts.tsx implementing Line, Bar, HorizontalBar, and StackedBar charts using the new library.
  4. Swapped the export in src/components/charts/index.tsx.
  5. Removed Echarts.tsx and uninstalled echarts dependencies.
  6. Verified with lint and build.

Replaced ECharts implementation with shadcn charts (based on Recharts) for Line, Bar, HorizontalBar, and StackedBar charts.
This involved:
- Installing `recharts` and `lucide-react`.
- Adding `shadcn` chart component (`src/components/ui/chart.tsx`).
- Implementing `ShadcnCharts.tsx` to satisfy `ChartsLibrary` interface.
- Removing `echarts`, `@types/echarts`, and `echarts-for-react`.
- Updating `src/components/charts/index.tsx` to use the new implementation.

This modernizes the charting library and aligns it with the rest of the UI components.
