My proposition for Ordering levels of the categorical variable in the loop resulting in tables with decreasing ordered levels easily readable

We've talked about this in our lab. We wondered about the ability to have:
- Categories
- User-defined order of categories and variables within the category
Demographics
| Age
| Gender
| Education
Health Behaviours
| Smoking
| Physical activity
Diseases
| Heart Disease
| Diabete
