FYI this only needs to be backported to 26.1.x since I already fixed the 25.x release branches with the arch change and we only use |

Heads up, but looks like we either got some new build runners in CI or something about the published manifest from our Redpanda releases changed. In addition that tarball format from Github seems to have slightly changed for a nix overlay that was updated recently. These are the fixes to get nix unbroken and the nodepool tests passing again.
