Support running multiple parallel catchup v2 missions simultaneously

The initial goal of this PR was to fix the
Error: INSTALLATION FAILED: cannot re-use a name that is still in use
happened recently with the config change for running parallel catchup with other missions.

The simple fix is to make the helm release name unique, which should in theory support multiple missions running simultaneously. So I went a step further to clean up the rest of the hard-coded k8s entities names, which now indeed supports multiple parallel runs.

Here is the top view of all pods, two missions are running at same time (each with 5 pods)
