Prod fixes

1. Changed urls to be relative to the host. This included a change in the "fake prod" database to use relative paths.
2. Cleanup. Several files are no longer relevant to how we handle the blue/green deploy.
3. Changed how to access dev findingaid. I made the inclusion of findingaid optional. To use findingaid, FA_IMAGE must be in your environment. This can be an image from our ghcr or one you've built locally, and you can use the with_fa profile like this: docker compose --profile with_fa up -d
4. Brought dev more in line with prod. This is mostly just changing where findingaid is mounted in the nginx container.
