What and why?

Pushing the changes from #1168 live to prevent broken links to moved GitHub notebooks.

@nrichers Please note that if we pull from a validmind-library release that is earlier than the notebooks being reshuffled, we'll need to checkout the notebooks/ directory and notebooks.zip to match what's on documentation repo main.
