Add documentation for vatSys and Euroscope sector extension

This PR adds new documentation to the SOPs covering how sector extensions work in both EuroScope and vatSys.

EuroScope

• Added a new section explaining that EuroScope does not support automatic sector extensions.
• Documented that controllers must manually update their Controller Info whenever:
  • primed frequencies change
• Included a clear example of a correct manual extension entry.
• Corrected spelling and terminology (e.g., “primed frequencies”).

vatSys

• Added a new section explaining that the VATNZ Plugin is included automatically in the New Zealand vatSys profile.
• Documented that vatSys automatically updates Controller Info based on primed and de-primed frequencies.
• Clarified that manual updates are not required in vatSys due to the plugin’s automatic behaviour.
