update parsing for new VM SKU variants

This PR updates the VM parsing logic to accommodate new VM SKU variants.

For example:

• Standard_M96bds_2_v3 (note the "2")
• Standard_DC48eds_v5 (note the "eds")
• Standard_NCC40ads_H100_v5 (note the 3-character "NCC" VM size prefix)
• Standard_ND96is_MI300X_v5 (note the "MI300X")

@tallaxes We can add more UT cases for the new SKU variants in #25

I've scaffolded out the new structures that these new SKUs offer, but wanted to keep the UT clean to make it easier to prove that this new parsing foo is back-compat.
